In my life thus far one of the greatest kanaka culinary experiences Ive ever had, was at an "uniki ceremony...where ceremonial and noa foods were prepared by Kealoha Domingo.  Every single dish was skillfully made - served with purpose and intent to fulfill the symbolic needs of the ceremony.  I marveled at his attention to detail...from the kalua puʻa to the rarely known Kupoupou fish served over dried and smoked popolo leaves which imparted a subtle flavor to the fish that is hard to describe.  I had never experienced anything like it before...I doubt I will ever again.

Culinary Hero that month. With Domingo’s guidance, Bayless made history in Hawaiʻi and created his
traditional Mexican dish, using Hawaiian cooking traditions.
